Thrown Off Schedule Tonight

It all started when I got to the gym parking lot...put my water bottle in my gym bag...and noticed it looked a little empty... I forgot my SNEAKERS!!! Who does that?! So that killed that plan. Back-up plan was to go get my nails done because I was trying to figure out when to get that done before my friends wedding on Friday. Unfortunately I walked in about 4 seconds after two other women and therefore, I had to wait...which is really rare for this place. I was already crunched for time, and didn't get out til 5 min before class started...so no food for me, and I almost ALWAYS have a spare bar or something in my bag, but today all I had was a few animal crackers. I wasn't that hungry but I could of used more than that.

Therefore I was STARVING by the time I got home a little after 9. I knew I needed some more veggies today, but was just too cold to eat some raw ones, so I made a little make-shift pizza. A half of a low carb lavash, some jarred sauce, thinly sliced green pepper, and a few crumbles of a new Garlic and Herb Goat Cheese I picked up this weekend. It was Delicious!!
That goat cheese was awesome!! Speaking of goat cheese...along with the Garlic and Herb one, I also grabbed THIS....
That's right! Chocolate Goat Cheese!! I haven't even tried it yet, but I can only imagine the possibilities!!

I just set up a pot of overnight steel cut oats...I love the way they turn out overnight.

For 2 servings... 1/2 cup oats, 3/4 cup vanilla soy milk, 3/4 cup water and pinch of salt.
Bring those items to a boil, stir, cover, and turn off the stove.
In the morning they will have plumped up way more than normal cooking, and I usually then turn the heat back on and add in all my accoutrements! This will be my breakfast for tomorrow and Thursday as I usually stay at Brian's on Wednesday nights :)

  1. I just got SO excited by your chocolate goat cheese!!! And, um, I've gone for a swim only to get to the gym and realize I didn't have my suit... oops. I just made some steel cut oats with apples and spices, tis the season :)

  2. Chocolate goat cheese? Thats crazy! I'm so sorry about your night! I do silly things like forget my sneakers all the time :) One time, I went into the gym for an early am gym workout and decided I would shower after the gym. Everything was going really well...I showered, got dried off, went to get dressed- yah, I forgot underwear and a bra...hahaha.

    I've never been to the farm, but I was so happy to see their cheese at that market! I'm thinking it will be a great combo like chocolate cheesecake, maybe tangyier (sp?)?? I've seen recipes for choc. goat cheese truffles...so maybe I'll try something like that!
