Taste of Wine Country: Mushroom Risotto

Brian and I have been slowly working our way through the 10 bottles of wine we brought home from our trip to Wine Country back in November.

It’s hard because you want to drink it, but at the same time want a “special” occasion or event to break open some of these bottles.  But I also don’t want to “save” them forever!  I mean I still have the bottle of champagne my mom gave us for our engagement…yeah, you know, saving it for a special occasion!!

We visited the Thomas George winery during our stay in Healdsburg.  We were out for the day, hiking/picnic, and the owners of our B&B gave us some recommendations for wineries to stop at on our way back.

One of these was the Thomas George Estates Winery in the Russian River Valley.  They had a very cool wine cave where they did tastings.

It was here that we bought our first bottle of the trip (and one of the more $$ ones we’ve ever bought…although at the same time I’d never tasted wine so good so it was ok ;)

Before we left, the guy who helped us that day said that this wine goes excellent with mushroom risotto!

We did not for get that piece of information, AND we were able to use one of our other purchases from that trip:

A bag of dried wild mushrooms we picked up in the Ferry Building in San Francisco.

Dried mushrooms are great because you can get a good variety and they keep for a long time!

You just need to remember that they need at least 30 min to re-hydrate

 Wild (Dried) Mushroom Risotto
(adapted from Ina Garten)

  • 1 oz dried wild mushrooms (or your favorite kind)
  • 2 1/2 cups boiling water
  • 3 cups chicken stock
  • 3T butter
  • 2 oz pancetta, chopped
  • 1/2 cup onion, diced
  • 1 clove garlic, minced
  • 1 cup Arborio rice
  • 1/2 cup dry white wine
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1/2 cup parmesan cheese

Re-hydrate the mushrooms with the boiling water for 30 min or until soft.  Remove with a slotted spoon, then give mushrooms a rough chop.  Carefully pour the mushroom broth into a sauce pan, leaving just the last little bit in the pan with the debris from the mushrooms (or use a sieve).  Add the chicken broth to the mushroom broth and heat over med/low heat, just until steaming.

In a large heavy bottom pot or Dutch oven heat the butter over medium heat. Add onion, garlic, and pancetta. Sauté for 4-5 minutes, then add mushrooms. Cook for another 5 minutes, then add rice. Cook for 2 more minutes, then add the wine and cook for 2 more minutes. Then add 2 ladles full of the hot broth mixture to the pan. Stir regularly until the broth has been mostly absorbed by the rice. Repeat this process of adding 2 ladles of broth, stirring until dissolved, until all the broth is used and rice is cooked but still has a little bite to it…al dente.

You have to keep regularly stirring but no need to go crazy.  This took me 35-40 min.  The mixture will be very creamy by the end.

Finally, remove from heat and add the cheese. 

We served this with some steak, and a small piece of left over fish from the night before (a little surf and turf action)

Just as good as we remembered.  Now I’m just sad it’s gone!!!   

Now I just need to plan some more wine-centered dinners for those other bottles ;)

Does anyone else have this problem of “saving” the good stuff and then years go by???  I think we’ve done a decent job with our wines from the trip, but still have 5 to go!

Wine Country Potato Leek Soup

Actually I got back Friday morning after a red eye from San Francisco, but we’ve had a lot of do once we got home, and I even had a blogger trip to Portsmouth yesterday!

The past couple months Emily, Megan, Daisy and I have been talking about planning a day trip up to Portsmouth since we all love it there so much!  We finally picked a date, and gathered a group of 10 Boston-area bloggers for a fun and food filled day!

Elina, Elizabeth, Megan, Meghan, Daisy, Michelle, Bianca, Emily, Jen, and I met up at Redhook Brewery for some lunch and beer!

I’ve been here many times, especially during college and right after college, as I went to UNH which is close by.  Even had my 21st b-day dinner here!

I was a little tourist-ed out after my trip, and since it wasn’t a new city to me I wasn’t taking as many pictures but I’m sure the other ladies will have some great recaps!  I was just excited to see all the girls :)

Portsmouth Trip 069

I know I have so much to share from my trip!!  So I think I’ll start with a recipe.

One of the highlights of the trip was the Sunday we left San Francisco and drove north to northern Sonoma county for The Wine Road’s Food and Wine affair!  I would never have known about this event if it wasn’t for some great advice from Meghan

This event went on Saturday and Sunday (Nov 5 & 6), and basically a ton of the wineries in the area would be serving a food pairing with one or some of their wines, and with your wristband you could visit as many as you’d like during the weekend.  We only did Sunday, but we managed to hit quite a few and tasted some AWESOME food.  The wine was good to ;)

The best part is that with your ticket you receive a gorgeous cookbook with all the recipes that were served at all the wineries!

There are SO many recipes that I can’t wait to make and share with you guys!!

I wasted no time either, as I just made one for dinner tonight!

We had this soup at our very first stop of the day that Sunday, at Sheldon.  It was amazing.  I ate my sample and finished Brian’s :)

I picked up my ingredients Friday when we got home, and re-created this delicious soup tonight.

Now you don’t need the truffle oil per se, but it adds so much and just takes this simple soup to the next level!

I’m so glad I am able to share recipes from this cookbook on the blog.  I did however make a couple very minor adjustments so I will give the recipe I made.

Potato Leek Soup with truffle oil
adapted from chef Dylan Sheldon in the “Tasting Along the Wine Road” cookbook

  Serves 4-6

  • 3 medium leeks, washed and minced (only the white and first inch of the light green parts)
  • 1 med onion, diced
  • 3 cloves garlic, minced
  • 2T unsalted butter
  • 1 bay leaf
  • 2 sprigs rosemary
  • 4 sprigs thyme
  • 4 med/large Yukon Gold potatoes, washed and diced
  • 1/3 cup dry white wine
  • 3 1/3 cup low sodium chicken broth
  • 1.5 tsp sea salt
  • 1/8 tsp ground fennel (optional, I couldn’t find this ingredient so I smashed up some fennel seeds)
  • 1/8 tsp ground black pepper
  • white truffle oil
  1. In a large heavy bottom stock pot over med-low heat, melt the butter with the onions, garlic, leeks, rosemary, thyme, and bay leaf.  Leave the sprigs of herbs whole as you will remove them later.  Sauté on med-low/low for about 5 min until the vegetables are soft.
  2. Add potatoes, broth, and wine.  Turn up heat to med-high and bring to a simmer.  Cover, and simmer over low heat until potatoes are tender, about 15-20 min. 
  3. Remove bay leaf, thyme, and rosemary.  Then puree the soup with an immersion blender, or transfer to a blender then puree until smooth and creamy. Personally I HATE transferring soups, so I always use my handheld immersion blender…get one, they are not expensive!!
  4. Serve in bowls and garnish with a few drops (or more!!) of white truffle oil, and a cheesy toast…

Cheesy toast: melt some freshly grated gruyere (or your favorite aged sharp cheese) on a thin slice of baguette and toast in the oven or toaster oven.

Creamy, comforting and makes for a great meal.  We were filled up with 1 bowl of soup and two cheesy toasts!

Whole Foods for the Holidays

This past Wednesday, the Whole Foods Market on River Street in Cambridge invited a group of local bloggers to come check out and sample their affordable holiday entertaining ideas!

I don’t think most people associated the word “affordable” with “Whole Foods”, but if you look for their specials and deals you really don’t have to spend a fortune on their high quality food!  I think we all learned new ideas and money saving tips for entertaining that night.

p.s. I only had my point & shoot camera which looks so grainy to me now compared to my DSLR! 

There were 4 “stations” if you will: Cheese (!!!), wine/beer, appetizers, and dessert.

When I walked in, there was a brief description given of the cheeses, and I believe I spent the majority of my time hovering at that table ;)

But first…

Chicken satay…I really liked this!  The dipping sauce was sweet but had a nice kick to it.IMG_1375

After a quick check on the WF’s website, it looks like all of these items are $10/dozen.  These would be great to have if you were strapped for time and wanted to have some bites for your friends a little more substantial than just cheese and dips.

I think the money saving key here is to present the food as it was that night…cut into smaller bite size pieces.  1 whole arancini or meatball may be a bit much to stuff in your mouth all at once, and maybe you don’t want a whole piece of chicken on a skewer…esp if you might be tempted to double dip (!!).  This way the food will last longer and your guests can sample more items.

Beverages:

There were a few wines to sample, as well as prosecco and beer!

Did you know you can get a respectable bottle of wine at Whole Foods for only $3!?!!  I didn’t!

These are made by Three Wishes, and for $3/bottle you really can’t go wrong to have some extra bottles on hand for parties or last minute hostess gifts that won’t break the bank…heck give away 2 at a time!

The beer we tried was one that made an appearance at my House Thanksgiving (picture from my old post, not from Whole Foods).  

For just over $10, this 22 oz. bottle would also make a great gift for your favorite beer lover.

My favorite drink of the evening, though, was a new Spanish wine that was only going to be available at this Whole Foods Market out of all the Cambridge/Boston area!

It was a red wine with a bright flavor.  I got a nice fruit taste as soon as it hit my mouth.  I’m still a newbie when it comes to reds, so if you’re like me….and  can get a hold of this wine, try it.

It wasn't even released for sale at the store that night!  I DID go back Saturday though and purchase a couple bottles.  One I brought to a friends party and they all loved it as well!  This was also reasonably priced at $13. 

CHEESE…my favorite!’

Oh cheese, glorious cheese!  What would a party be without you!  So many delicious cheeses to try and I was pleasantly surprised that most of the table was dominated by goat cheese!

a panko crusted goat cheese ball of deliciousness.  A bit greasy, but that didn’t stop me.

This is their affordable cheese tray!  (crackers and almonds added after I believe)

Basically for way less than you’d think, you can get a tray of various different high quality cheese all cut up and ready to be plated and served! 

I don’t know about you, but I’d rather spend my $10 on great cheese, than mediocre cheese with a few “extras” on the platter. 

This tray had Havarti, Brie, Danish Blue, cheddar, and cheese similar to an aged gouda.

My favorite, by far, was the gouda-esqe cheese.  It’s called Grana Padamo and was described to us as a cross between a gouda and a parmesan.  Amazing.

The cheddar on the platter was also special because it was TM Cheddar…as in “Team Member”.  The employees got to go up to Vermont to make cheese one day and now it’s sold in the store!

The other offerings on the cheese table involved items you can make from Goat Cheese…yes please!

Above, are 3 different spreads all made with a log of goat cheese and:

  • olives
  • oven dried tomatoes
  • peppadew peppers -  these are a pickled pepper with a sweet but also slightly spicy taste.  I had never had them before and now I am HOOKED!  I even bought the peppers and cheese to make for a party this weekend!

Here we have goat cheese logs rolled in either candied walnuts, or marcona almonds.    IMG_1386

I basically had cheese for dinner that night and that is totally fine with me.

finally…DESSERT! 

A variety of mini pastries!  Even with a knife to cut them so we could try multiple items.

I had half of a refreshing sweet lemon tart :)

These cupcakes were the Whole Foods “Two Bite” cupcakes that you can get in packs of 12.  They were taken out of the package, rolled in sprinkles and plated to look like a beautiful holiday spread…IMG_1390

I had a chocolate one and called it a night.   Cheese is filling :)

Now I believe Whole Foods new exactly what they were doing luring food bloggers into their store…I saw almost all the attendees with grocery baskets after leaving the event ;)

One More Week

I swear I only have 1 more week of this crap (i.e. studying and stressing), then I can go back to normal life and only worry about work, the wedding, blogging, house hunting...you know, the usual :)

I wisked myself to my mom's house this weekend to get in some uninterrupted studying time!

But a mini re-cap:
The Weather!!
I'ts been SO GORGEOUS here in Boston!! Friday was 70*!!!! I couldn't possibly make myself study Friday after work so I got home and went for a run! It was great. I don't know how far I went but I was out for about 40min...running with some walking. Then I met up with friends in the North End where I had 1.5 glasses of Savignon Blanc at Bacco, then an appetizer at Monicas!

The wine was Oyster Bay Savignon Blanc...AMAZING!

Saturday was super study time...I made myself a GREEN smoothie and headed off to Mom's. I love how sunny warm(er) weather makes me want to eat better in general :)
  • 1 cup Almond milk
  • 4 frozen strawberries
  • handful of Kale
  • 1/3 ripe banana
  • 1/2 scoop vanilla protein powder
  • >1T Almond Butter
  • mmmmmmmmmmmmmmGREEN!
Saturday wasn't too exciting, I did take a shopping break with mom later that night. I'll have to take some pics of my purchases!

Sunday was grocery shopping, and then I made my mom Kale Chips!She gets such a kick out of some of the things "I come up with" (I know I didn't come up with them...I told her that) but she really liked them!

then MORE studying, then another great run!

I followed up the run with lunges up and down the driveway, some arm work with dumbbells and abs!

For dinner we got out, and headed to one of my faves: Legal Seafoods!

After the wine Friday I was actually craving it again...this is like the most wine I've drank in 1 weekend in a while hahaNot as good as Friday's...but still yummy. I love the little fishy guy on their wine glasses.

I wanted to get a good serving of fish, so I ordered the Wood Grilled Assortment: the Chef's selections of three fish, shrimp, and scallopsThat would be: Scallops, Shrimp, Blue Fish (far right), Tuna (middle under the shrimp), and swordfish (can't see it under the shrimp). Steamed Broccoli and Snap Peas as my sides!

They are the masters a wood grilled fish...it's always so flavorful and perfectly cooked! Plus I have leftovers for tomorrow.
Once again I hate my lack of posting lately, but everything is just sucky lately...wow this exam just puts me in the worst mood, I can't WAIT to be done on Friday!!!!
