Crab Stuffed Flounder + Panko Giveaway!

I love fish, but we don’t cook it at home nearly as much as I’d like to. Sunday was a big grocery shopping afternoon (after doggie time at the beach!), and one of our stops was Whole Foods. We can never just go to one grocery store…usually two, sometimes 3! This was a 3-store kind of day (Whole Foods, Trader Joe’s, and Market Basket). They are all close-by so it’s not like we go out of our way, and well, I love grocery shopping :)

We usually only will buy fresh fish at Whole Foods. I know it’s good quality and it never smells fishy over in their fish department. It can be expensive, but if you try to stick to what’s on sale it really isn’t any more expensive than most other stores!

On Sunday, I also learned another fact which solidifies Whole Foods as my go-to supermarket for fish…Genetically Modified (GM) fish. I have to admit that I don’t read or listen to the news nearly as much as I should, so I had no idea that Genetically Modified fish was even an option?! However the nice guy working the fish counter at my Whole Foods was telling us that the FDA is close to approving the first genetically engineered salmon to be sold commercially! Whole Foods will NOT be selling any of these GM/GE fish, but they will also NOT be allowed to have signs labeling that their fish is NOT genetically modified!? I think this whole thing is just insane and can’t understand why anyone would want to eat this “engineered” fish?! Here’s a recent article I just found on the subject.

I digress. While browsing the fish selection, we saw that Flounder was on sale for $8.99/lb, so we opted to go for that! I had this Lemon Pepper Panko I’ve been dying to use and wanted a fish that would work well with it. The WF’s fish man asked what I planned to do with the flounder and I told him. Well he had a great idea of his own…stuff it with crab cake filling!! I purchased about $4 worth of un-cooked crab cake mixture (using blue crab), and that was more than enough to fill our 5 small fillets.

Talk about an INCREDIBLY easy dish that looks and tastes like something much more involved!

Steps:

  • Rinse and dry fish fillets
  • Spray a glass casserole dish with cooking spray or brush with olive oil
  • Scoop crab filling onto fillet, I used about an egg-size amount of crab filling. You could use more, but I didn’t want to have trouble keeping the filet’s rolled up while they baked.
  • I rolled the fish around the crab, overlapping the fish around the bottom and placing the rolls, ends side down, so they don’t unroll…make sense? Or you could use toothpicks to hold the fish together around the filling.
  • I then brushed the rolled filets with olive oil and scooped the Lemon Pepper Panko on top.

These 5 baked at 375 got 12-15 minutes. They were thin, so it was easy to tell when they were done. The fish appeared noticeably more opaque white and just started to “crack” at the tops of the rolls.

We served ours with roasted Brussels and some jasmine rice. I normally would have preferred brown rice or potatoes, but all I had was white jasmine rice…good for a change though :)

This was DELICIOUS! And we had leftovers for lunch the next day. Fish dinner for under $5/person!

I know Panko isn’t exactly a “new’ thing, but until now I think I’ve only ever used it one other time! It’s a large flakey crumb, much coarser than regular bread crumbs, and this Lemon Pepper flavor smells divine as soon as you open the box, and it really adds a nice punch of lemon flavor to your dish.

Along with the box of Panko, I received a big beautiful cookbook! I LOVE adding to my cookbook collection, so I was especially giddy about this book!

Cold Monday vs. Awesome Food-day!

Yes, it was about 34 degrees outside this morning, and I'm guessing no more than 62 in the apt since we refuse to touch the heater yet...but that's ok because it's been a great day for Bridget's taste buds and now its Sunny and warm not freezing (around 50...maybe)...so not such a bad Monday.

The first party in my mouth this morning involved the brand new coffee I picked up at Trader Joe's yesterday, which combined this:

Yummm!!! TJ's Gingerbread Coffee! Looks like a new product maybe? I loved all the spices in the coffee...cinnamon, nutmeg, cloves, ginger! Maybe it wasn't the top coffee ever but lately my homemade coffee has...how do I put this nicely...sucked! So this was a very welcome change.

For breakfast I finally wanted to bust into my giant container of TJ's European Yogurt I bought last week when they were out of Greek. I added some thawed frozen berries, honey, and topped with a mix of Go Lean Crunch and Annie's Honey Bunnies!

I definitely prefer the plain Greek yogurt over this, it was just a little too tangy and not as thick. I think it would be better in baking or smoothies...I'll find a use for it.

Due to a meeting I didn't get to eat breakfast til almost 10!! So I wasn't hungry again until about 2...when I got to delve into my leftover Scampi!! It was just as amazing today. To get my veggies, I cut up some fresh zucchini and summer squash this morning and "steamed" it in the microwave here at work, then added it to the scampi and heated that all together...YUM!!!

So glad I was able to re-do my order last night!

For dessert I had a homemade cookie from the roomie...they are Oatmeal Chocolate Chip from the cookbook Clean Foods by Terry Walters. They have oats, walnuts, coconut, choc chips, cinnamon, and are sweetened with maple syrup...yum!!
Still pretty busy at work, and more studying tonight...have a great Monday!

Too much excitement for 1 night

Update from last night: When we finally got back to my apt after dinner, there was some tool parked directly in front of my driveway, blocking the whole thing!! Who does that?? So I did a quick general loud question of it outside in case the owner was close by...but nothing. So we called the police, and 45min later it was towed away! My roomie and I actually got a little satisfaction out of it haha...sometimes people park close to the driveway and make it very difficult to get in and out, but nothing we can do. So that made us wide awake, and I didn't get to bed til midnight! (wow I sound old...so I know its not that late, but for a work night it is for me!)
Woke up not feeling so great...I think maybe it was eating so late last night...uggg. That and my throat was a little sore...awesome.
So I went for black tea with a little honey this morning, and some more tea (echinacea) when I got to work.
Surprisingly my hunger came full force around 8:30, so I had my cereal.
Kashi Go Lean Crunch (honey almond flax) mixed with Kashi Autumn Wheat, a little bit of a banana, a few strawberries, and a few blueberries...finished off with 1 cup of skim milk.Very satisfying! Mid morning I ate most of a nectarine, a few PB puffin puffs, and a few TJ's animal crackers...and headed out at lunch time!
I was definitely feeling the effects of no morning coffee (very sleepy)...so I got a skim misto at Starbucks, and headed to Borders to perhaps use a coupon I had for 25% off!
I bought this!
Came back and made lunch. I need a break from the salads, and since I wasn't feeling well this morning I wasn't exactly in the mood for anything and couldn't think of lunch.
I ended up having a little left overs from last night (we had a little gnocchi left, and a small amount of the potato risotto that came with the scallop entree) The potato risotto was interesting...it was diced potatoes cooked risotto style...really good...I think I might want to try and re-create it using sweet potato! (sorry no pic), and for veggie I had some sugar snap peas!

These are probably one of my favorite veggies to snack on raw.

I got my protein for "dessert", and had a peach Chobani with strawberries and a sprinkling of homemade granola...delicious!

Class tonight (topic - Soils...fun fun)...at least no work tomorrow! Took the day off and mom and I are going to take a day trip to the cape (cod that is...for those not familiar).
