Dinner Plan B

I was all excited to make tonight's dinner...Sweet Potato Black Bean Burritos from the Moosewood Low Fat Cookbook! I had the sweet potatoes cooking and went to saute the onions....and the 1 onion I had, apparently I had for a while because it wasn't looking so hot. Now what?? I suppose I could of made them without, but I know how important onions are for a saute like that so I didn't want to do it half ass. So I put the cooked potatoes away for another day....

Plan B...hmmm...I had just worked out and was hungry now! So I had a variety of things...half of a flat bread spread with pesto, sprinkled with mozzarella cheese and toasted in the toaster oven...then topped with fresh tomato. Also had half an ear of steamed corn, a little steamed broccoli, and a small cup of some leftover Spanish Steak that my mom made.
Ok so the steak (more of a stew) doesn't look so great...but I assure you it tastes amazing.

Dessert was half a grapefruit...and then a Skinny Cow Skinny Dipper for a little treat!

    Sweet Potato + Black bean = best combination!
