First Day of Fall

It's the first official day of Fall! It's feeling that way here too...chilly today, and cloudy :( Making me so tired! I never get good sleep Sunday nights...really doesn't help that there is a club around the corner that apparently has a big turnout Sunday nights?! Don't you people work!?

Anywho...back to the apple crisp. Slightly disappointed! I realized halfway through the baking that I missed a crucial step...adding flour to the apple filling which makes the juices into more of a sauce, that and I don't think I had enough topping so the apples near the top kind of got dry. Live and learn...this is what sometimes happens when I'm looking at 3 different recipes trying to create my own. It usually works great but just not last night. Still good though...especially with a little low fat ice cream! The Eddy's slow churned brand is AWESOME!! Tastes so good for a lighter ice cream!

I really should remember not to eat so late though...this crisp didn't get eating til around 9...woops. I never feel all that great in the AM when I do that, but then was STARVING for breakfast when I got to work.

Big bowl of TJ's plain Greek yogurt with half of a banana, some strawberries, and Kashi Go Lean Crunch honey almond flax, all mixed in with a drizzle of honey :)

I packed up a leftover SPBB Burrito from last night...even though it was the last thing I wanted to think about this morning, but hopefully I'll be in the mood for it come lunch time. Although I'm way more excited to eat the apples I packed today!
