Welcome to October!

I really noticed the foliage more this morning while driving to work! Its so pretty, and if Brian and I go up to the White Mountains this weekend like we're planning to, it's going to be even more incredible up there. It's since become quite dreary out though....*sigh*

Breakfast was really good and really filling! I decided to cook regular oats in the microwave at work. Before I left this morning I put 1/2cup of oats in my bowl, with 1/2cup Vanilla Soy Milk , 1/2 cup water and a pinch of salt, and let them sit until I got to work. I think next time I'm going to reduce the liquids a little...I'd prefer it a little less liquidy.


Over all this worked out very well. I heated them in the micro for 3min, added some sliced almonds, a little dried fruit (raisins, cranberries...etc), a small spoon of Almond Butter, and just a tiny drizzle of maple syrup. It was great!! (I still prefer my steel cut oats but these were a close second...and easier in a pinch!)

This kept me full until lunch actually! I ate lunch around 12, not 1, because I'm going to be having an early BIG dinner (details in a few...), so I wanted to eat lunch slightly earlier, and then I'll have a snack in a few hours...some fruit.

For lunch I had my sauce...its so good...I just eat it like chili, its so chunky! I served it with a piece of sprouted wheat toast that I melted a slice of provolone cheese on top! Also a small garden salad...romaine, baby spinach, green pepper, grape tomatoes, a tsp. olive oil, and 2 tsp. balsamic vinegar, S & P.

For a sweet treat, I took another trip to the secretary's desk for a mini Twix!!I'm a sucker for these mini candies...the twix was about 1" long :) And then I pulled out my stash of TJ's Dark chocolate covered espresso beans...Had 3 of those...and now I'm very satisfied. I have a feeling this meal is going to last me a while as well.

Which is great because we have a Tasting tonight!! We have had 1 tasting so far with a catering company...it was delicious, and we have met with 2 others as well and tonight we have a tasting with one of the other companies. Both of these companies are similarly priced so I really need the food to help me in my decision making. I told the first company that I'd decide by Friday!! :0 It's so hard because this is the biggest ticket item for the wedding, and food is really important to me and my family, so it's gotta be incredible food! If this is anything like the last tasting, I'm going to need a walk after haha. I'll be sure to snap some pics of the food!

  3. yum tastings sound fun. don't put too much pressure on yourself whatever catering company you pick it will be delish and enjoyed by all at your wedding i'm sure. if you can't decide between 2...flip a coin. Seriously sounds childish but my bf and I do this when we are being indecisive about what restaurant to go to haha.

    oh man halloween is right around the corner and the mini candy is going to be everywhere this is bad for me because I can't resist!

  6. I forgot to do the tag tonight! I'm sorry!! I will do it tomorrow! Lunch looks yummy. I <3 chocolate covered espresso beans! Do you know where you guys are getting married yet?
