And the yummy food day continues...

After work I decided to get in a quick gym trip. My knee was bothering me today so I just did the elliptical, but stopped after about 25min because I started getting really bad cramps! Like a running cramp type cramp but it was more intense than normal and really weird because I've NEVER gotten them from the elliptical?!! So I just stopped and went home since I really needed to study anyways.

Dinner was really yummy and quick! I started with some leftover veggies and spinach dip that we brought to my friends party Friday night.
Then I had some homemade soup the roomie cooked this weekend. Its an Autumn Chowder and either her or I (or both) make it every year around this time. She swiped the recipe from her old roommate before moving out...hehe... and since we've updated it a little...specifically adding Sweet Potato!

I enjoyed this soup with two left over bread slices from Brunch yesterday...a slice of the black olive bread and the multi-grain which I topped with some PB and raspberry fruit spread!



This soup is SOOOO good! Such a comfort food! I'm sure it could be healthified a little but I don't think its that bad to begin with. YUM!

Autumn Chowder:

6 slices chopped bacon (3 reg, 3 turkey)
1 cup chopped onion
1 cup water
2 ½ cups pared, diced potatoes (sweet and regular)
1 cup chopped carrots
2 tsp instant chicken bullion
3 cups milk
2 can (16oz) whole kernel corn, drained
1/8 tsp white or black pepper
3 cups shredded cheddar cheese (12 oz) and/or monetary jack
3 tbsp flour

Partially cook bacon. Stir in onions and cook until bacon is crisp. Stir in water, potatoes, carrots, bullion. Heat to boiling. Reduce head and cover. Simmer until potatoes are tender (15-20 min). Stir in milk, corn, and pepper. Heat to simmering. Mix in cheese and flour. Add to soup, stirring until melted.

I'm sure you could cut the bacon and cheese a bit, but this makes a HUGE pot of soup...I don't know how many servings but if I had to guess maybe 10? It's just super yummy :)

Then I hit the books to get in some studying before Gossip Girl (what you think I'm going to let a little studying get in the way of GG!?)

I made myself some Tazo Lotus Green Tea while studying and later had a mini Biscotti!











This is a really good green tea, I love the floral aroma of the lotus blossoms.

Probably not the most productive night but what can you do....

    I LOVE GG. The girls' clothes are so fun and cute, and the guys...well, they're just fun to watch. :-)
