Tastings = Party in My Mouth

This had got to be one of the best parts of planning a wedding...TASTING!! We are in the midst of trying to pick a Caterer. We have met 3, have had a tasting with one of those companies, and last night had a tasting with another (we're giving up on #3 because we just didn't get as good vibes from him). Now that we've had 2 tastings, we need to make a decision. But first...last nights tastes:

This was our little table all set up in the middle of their big kitchen/work area. I liked the linens (not my color, but nice quality).


Hors D'Orve #1 - cherry tomatoes stuffed with fresh mozzarella and basil
We really liked them, but I think they may be a little too simple for a party food.

#2 - Caramelized Onion and Goat Cheese Bouchees ~ Topped with Roasted Red Pepper
The filling was awesome, but the pastry cup was a little lacking, sad because I LOVE goat cheese!

#3 - Teriyaki Honey Chicken Skewers ~ Marinated Overnight and sprinkled with Sesame Seeds
These were great! Very flavorful and nice presentation

#4 - Maryland Crab Cakes with Horseradish & Dill Dip
YUM!! Well I LOVE crab cakes to begin with, and these did not disappoint!

Next came #5 and #6.
On the left - Beef Tenderloin and Rosemary Spread Canapés
On the right - Fresh Corn Fritters ~ Crisp Corn lightly Battered with Scallions and Shallots served with a Cayenne Aioli Dollop
The tenderloin was delish! But the corn fritters were AMAZING!! So good! Light and fluffy, and the cayenne aioli gave just a little kick...LOVED them!
Now for the salad course - The New England Cranberry Salad: Mixed Greens with Dried Cranberries, Walnuts, Gorgonzola and Cherry Tomatoes and a Balsamic Vinaigrette!
AWESOME! This is my kind of salad.

Finally DINNER! The two options on our plates were:

Chicken breast with a apple and creme brie stuffing
Swordfish, pan seared with lemon and herbs
Mixed grilled veggies
Fingerling potatoes with vidalia onions

The fish was phenomenal! I know swordfish is one of those fish that a lot of people don't like because it has a stronger flavor than most other white fish...but this one was not...it had a very delicate flavor and was cooked perfectly!

The chicken was good, not great. The biggest problem I had was that it was a smidge dry. The stuffing was good but I was hoping for a stronger apple flavor.

Veggies were Amazing!! And potatoes were great too, although we're not going to do potatoes for the final menu. Great for a first tasting though.

Now the hard part. Deciding!! It's def. not a clear cut decision...place #1 we loved the hor d'orves more, but here I liked the entrees....but its hard to use that basis because it all depends on what was chosen...I could of picked a different item and loved it way more. The other thing is the person we met with. Place #1 I lover the women, although she wasn't the cook, and at this place the person we dealt with was the owner/chef and we really liked how organized she seems to be and her being the quality control over food. HOWEVER, we just learned that she has a personal conflict that day so she, herself, would not be there but she was very confident in her staff, and said that would be the only event they took on that weekend.

I don't know!

  1. Yum! Everything looks delicious! wedding decisions are hard- go with whoever you feel like you can trust. I had some questionable vibes about my wedding photographer...and let's just say I still don't have final pictures or an album a year later.

  2. OMG what a decision you have to make!

    My friends and I have pretended to be engaged and try on wedding dresses for fun and with a gay guy friend of mine we pretended to be engaged to try on wedding rings for fun, now I think you've introduced me to a whole new level of pretending to be engaged! Tastings! That looks amazing!
    (Of course I would never have the guts to go so far at pretending, I guess I will just have to wait for the day when I really do become engaged.) Damn it where's my prince charming!

  4. i would go with this woman. although she won't be there, organization is SO important!!!

    also, i don't mind the cherry tomatoes + mozz bc maybe they will be a nice "palate cleanser" type of food that people will want between more creative flavors?

  5. Those little mini crab cakes look amazing! I also love the idea of the cherry tomatoes! may be simple, but what a great idea! Go with whatever you will want to eat most! Its your wedding!
