Super Productive

I feel like I've been going a mile a minute lately...but in the good way. Work is really busy right now, so at least the days are going by a little faster. I even came in early today, so last night after class I needed to make my lunches for today AND tomorrow (since I'll be at Brian's), and pick out clothes for both days. Let me tell you, some days my closet and I DO NOT get along haha. Last night wasn't too bad but I don't know why sometimes I "just don't have anything to wear" hahha...if you saw my closet you'd laugh too...its exploding with clothes.
So last night I made another BOMB salad, plus a mini to go with some Chili I took out of the freezer for tomorrow. My lunch today is on the left, and the mini on the right. The mini is just veggies, no cheese or chicken.








I also set up some overnight steel cut oats for bfast today and tomorrow.
I made them with:
1/2cup oats
1 cup skim milk
1/2 cup water
salt
Then in the AM, turned the heat back on and added to my 2-serving pot:
1/4 walnuts
1 Banana chopped
4 chopped dried apricot
about 1T or more of dried cherries
1T Maple Syrup
Divided into my bowls and topped with some currants and a few more cherries!

My mid morning snack was a string cheese, and then came LUNCH! Yay salad time...
(p.s. check out the REALLY LONG baby carrot in the middle...it was kind of scary not gonna lie)

I also broke a piece off of this bar that I opened up yesterday. I'm a sucker for the sweet and salty combo. This was my first time with this flavor, I've had the Peanut Butter Pretzel flavor and that one is awesome! This is great as well...the pretzels add that yummy salty flavor here and there, but there is also almonds, peanuts, raisins and choc. chips!

Just remembered I never commented on the Ellie's cherry walnut bars that my roommate made.

They are good, not amazing. A tad dry in my opinion, but much better when I heated it up in the microwave first! I like how they are not too sweet though, and the apricot preserves "glaze" on top add a nice tangy sweetness! I think they are a great starting point for some modifications. Never the less, I still packed one for today AND tomorrow...so yeah they are good :)

I'm sure the afternoon will fly by too...yay! Don't know whats in store for dinner, but I really can't spend any more money so hopefully Brian has something at his apt...hmmmm. It is gorgeous outside so maybe we can take a nice long walk.

  1. Good to know about the bars. I've never had currants. DO you recommend them over raisins or dried cranberries?
