Merry Christmas Eve Eve!

I still haven't wrapped my head around the fact that Christmas is in TWO DAYS!! I am working a full day today, then I think just a half day tomorrow (then I'll just make up the other half sometime during my "vacation"). We are off til Jan 5!!

So this cold that is trying to break it's way through my immune system still hasn't gotten full blown yet (thank goodness). I think it's all the soup, tea, and Emergen-C's! I swear those little magic packets of goodness are incredible!! My other cold fighter is Echinacea teaMaybe it works, maybe it doesn't...but I really think it helps me. I'm hopeful because usually if I can hold it off this long it won't get any worse...I'm crossing my fingers it just withers away before Christmas, because it's not too bad right now.

Breakfasts:
Today and Yesterday I had delicious, hot, banana-y, bowls of oats!

These bowls contained the usual:

  • 1/3 cup oats, 1/3 cup water, 1/3 cup skim milk
  • salt and vanilla
  • 1 banana (well most of a banana, I usually take a few bites)
Cooked microwave style at work, then added:

  • 1 tsp Pumpkin butter
  • topped with my Gingerbread Granola
  • 1 spoon of White Chocolate PB
  • a few choc. chips and PB chips from my trail mix (not pictured because I added them when I returned to my desk)
I just love the little bites of melted chocolate!
I am really loving this oatmeal, but I think over my "break" I am going to search for new add-ins to mix it up a little!

Dinner

Last night I was psyched for BBQ leftovers...although there wasn't much. That's only about a 4"x4" plate. Mac and Cheese, broccoli, and pulled chicken.

I added my own extra BBQ sauce (mom's homemade) to the chicken, and half of a sandwich thin with Smart Balance. Plus some Emergen-C in my Vineyard Vines glass!And then I was still hungry...specifically craving more BBQ sauce! The fastest thing I could get together was some frozen corn and peas, a half of a low carb pita with cheddar cheese melted in the toaster, and BBQ sauce to dip, lick, and just plain enjoy!
Lunch today will be........Yup, SOUP!! Although I'm really switching it up and instead of pita with hummus, my side is a sandwich thin with American cheese toasted.

Dinner, however, will be VERY exciting because Brian and I are going to a pre-theater dinner at Bonfire!

This is another one of Todd English's restaurants, and I have never been so I am anxiously anticipating my food. It's like an upscale steak house with a Mexican flair! They even have a separate Taqueria menu.

After dinner we will then walk over to the Wang Theater for my birthday present that Brian got me last month...tickets to the Grinch!
One of my absolute FAVORITE holiday movies, as a musical, 2 days before Christmas...SO SO EXCITED!!

We are also exchanging gifts tonight, so I'll have to let you know what I got tomorrow :)

  1. Good work chugging the emergen-c's! Those help me a lot, I also try to drink regular OJ, and sometimes an Airborne "shot", haha put the airborne in a little bit of water, i don't know it seems stronger! Feel betta and have fun tonight!!

  3. I have never tried the emergen-c's but I know people really love those! I need to buy some to have around the house just in case! I hope the cold doesn't break through!!

  6. I hope you feel better. The Emergen-C packets always help me!

    I wish I could suggest some oatmeal add ins, but I am boring - pumpkin, banana, peanut butter. Once I used chai tea instead of water as the liquid and that was really good.
