Man, my weekends are always pretty jam packed, but I like it that way. Especially when I get to relax on Sunday mornings, make breakfast, and bake!
Friday night turned out to be delicious. The original plan was for roomie and I to drive down to our friends place and get pizza. However, with the ridiculous traffic leaving Boston on a Friday evening, combined with our friend and her BF already starving...we decided to do dinner separately and go down after. GREAT IDEA. Mostly because this meant we could hop over to Harvard Sq to go to before there is a 90 min wait...which can happen easily on Fridays. We have both been CRAVING this...specifically the:
They are the BEST!! First though is some warm salty tortilla chips and awesome salsa!
We were both also in the mood for a Margarita!
Mine was a special that day, it had some Rosearita(?) tequila, chambord, and cranberry juice! Tangy and refreshing.
Then they came...my half veggies half chicken FajitasI will say I was SLIGHTLY disappointed because the veggies usually have more of a nice grilled flavor...more charred...they were still tasty though so it didn't really matter too too much.
All my fixin's...rice, beans, and plate o' cheese, sour cream, guac, and tomatoes!
PerfectionWe are going to fast forward to this morning. I tried taking pics of my meal yesterday but it was too dark...I did have 2 crab cakes and a garden salad though :) Also last night my mom, fiance, and I went to a big comedy show in Boston with Dennis Leary, Jim Breuer, Lenny Clark and others...SO FRIKING FUNNY!!!!
This morning I really wanted to make Cranberry Orange Bread...so I got my moms recipe that she got from some woman she used to babysit for back in the day...this is an OLD recipe. I've updated it with some whole wheat pastry flour and canola oil instead of shortening.
My recipe consisted of:
Cranberry Orange Bread 11-16-08
NOTE: I have a larger than normal bread pan so this recipe is increased by about 1/4, if your using a regular loaf pan you may have extra batter...I'd throw it into muffin tins :)
Sift Together:
1 3/4 cup Whole Wheat Pastry Flour
3/4 cup All Purpose Flour
1/2 t Salt
3/4 t Baking Soda
1 1/2 t Baking Powder
2/3 cup sugar
Place into a measuring cup:
1 orange - zest and juice
3 T canola oil
Enough milk to make 1 cup1 egg and 1 egg white beaten
A little over 1 cup fresh cranberries
3/4 cup chopped walnuts
Add wet into dry, then add cranberries and walnuts...stir to combine
Place in greased loaf pan, and I love to sprinkle the top with raw sugar...just gives it such a nice sweet crusty top!
Bake at 350 for 1 hour
Meanwhile I made some Tropical French Toast for breakfast! I used some
Whole Grain Seeded bread
1 egg + 1 egg white
skim milk
vanilla
In another bowl I had shredded coconut to dredge the bread after the egg mixture
I also sauteed some bananas and pineapple in a little butter and brown sugar in another pan
Serve French toast with some fruit mixture and more coconut, syrup on the side! This was YUMM!!And now some more pics of the gorgeous bread:

ReplyDeletei LOVE border cafe! i try to go as often as i can with my friends. my favorite meal there (besides the fabulous chips+salsa) is the vegetarian salad with beans in the crispy shell. deeeelish!
