Strawberry Rhubarb

Ice Cream :) Oh yes.


I have SO many things to blog about, and just can’t catch up. Thank God for Twitter right? This was probably going to be part of a longer post based on everything I made on Monday (I was a fiend in the kitchen) but I’ll just do one for now :)

No sense in saving the best for last either, I’m getting to it right away.

I received an ice cream maker for my birthday a couple years ago and haven’t been using it nearly enough. Then I saw this Sour Cream ice cream and it just seemed so perfectly easy that I needed to try it.


I also had some rhubarb that needed to be used and really wanted to incorporate it.

Strawberry Rhubarb Sour Cream Ice Cream

I started by cooking down the rhubarb with a few frozen strawberries and sugar


  • 1 cup chopped fresh rhubarb
  • 4-5 frozen strawberries
  • water (sorry didn’t measure, but I used a medium sauce pan and the water didn't even cover the strawberries, so not too much)
  • 1/2 cup sugar


Combine in a saucepan and bring to a boil, simmer until soft.

Then I strained out the water, put the mixture into a bowl and used my hand blender to puree the mixture. You could also put it into a blender or food processor.


I then went to the source for the Sour Cream Ice Cream Recipe

  • I used light sour cream
  • 1/2 cup sugar (used 1/2 cup in the rhubarb cooking earlier)
  • left out the lemon


Mixed the rhubarb mixture into the ice cream base and added:

  • 1 cup fresh chopped strawberries



Chilled ice cream base in the fridge for 1 hour then added to my ice cream maker. Luckily I’ve kept the frozen bowl to my ice cream maker in the freezer since we moved in here last year.

Then it was time!


I love watching it churn away.


I must say my taste right out of the ice cream maker was the BEST BITE EVER!! And it’s pink :)


I filled a quart container plus a mini.



Then I made sure to lick every ounce off the ice cream maker paddle!!

A couple hours later it was dessert time.


This was delicious… so creamy, only ever so slightly tangy from the sour cream. I’ve been having a little cup almost every night this week! Must make more ice cream soon! :) IMG_9820

Well that will have to do for tonight…it’s late! Brian and I just dropped $200 at the grocery store because we’re having some people over Saturday. Anyone have a good idea for a nice light maybe fruity/lemony dessert!? I usually have a million ideas but nothing is coming to me and I’m just stressed about everything else that has to get done!!
