Oh hi!
I miss my blog!!! I’ll spare you the gory details but work has been a wrench in my side for the past 3 weeks!! Big Project = Late Nights (and weekends) = no cooking, no working out, and a sad face. That’s on top of the freaking insane snow, but I know you’ve heard enough about that already.
Literally I’ve had TWO workouts in just under 3 weeks!! WTF. I really hate that. And how is it, that sitting in front of a computer being sedentary for hours makes you SO much more tired than normal?
Anyways, deadline is done and now hopefully I can get back to normal. I’m almost scared for my next workout because my last one was rough. One of the two workouts was this past Sunday, kick boxing. Usually I dominate that class, and its hard! But on Sunday I found myself getting out of breath much too often and had to slow down at times…grrr.
Time to get back at it, full force!
While I don’t have any exciting culinary creations to share, I did snap a few photos during the past few weeks to share…
Working from home. It’s rare I can do it, but getting up early on a Sunday was actually quite nice.
Was able to make breakfast, eat and work with lots of natural light!

This is Goose Island’s Sofie! I first tried this at the Belgian Beer Fest back in November and was so excited when I saw it in the store!
I mixed the ground beef with a can of black beans, chopped red peppers, and the taco seasoning.
Salad for me!
- Romaine
- Avocado
- red onion
- beef/bean/peppers
- sprinkle of reduced fat cheese
- salsa
- light sour cream
- Fresh cilantro
- squeeze of lime juice
And finally I leave you with my absolute FAVORITE veggie pizza. I was non-stop today and actually missed lunch. Thankfully had a few snacks to get through the day but Brian and I were getting home late so I decided to get a pizza & salad!

I love a good veggie pizza, but this one goes over the top!
Fresh broccoli, caramelized sweet onions, sautéed button mushrooms, marinated artichoke hearts, grilled asparagus, sautéed peppers, and a sprinkle of our cheese blend.
The caramelized onions and grilled asparagus really make it stand out! Amazing. Luckily its in a nearby town and somewhat on my way home from work!
Confession: I was so hungry I ate a slice as soon as I got back in the car… yeah.
Now the plan is to relax, workout, and get back in the kitchen!!
Oh yeah, and I finally ACTUALLY registered for the half-marathon in May….holy crap its really happening!! Better get my run on!
