10th Annual “Apartment” Thanksgiving

So most all of you know by now I always host a Friends-giving the Sunday before Thanksgiving.  Its been a tradition since junior year of college and we just realized this marked the 10th Anniversary!!!  Crazy!!

The setting, the food, and the guests have tweaked a little over the years but in general it’s stayed the same.  Only now I’m in a house not an “apartment”.

You can check out all my past 3 years of blogging about Thanksgiving and all the recipes I’ve used here: 2011, 2010 (and this 2010 recap has links to 2009 and 2008 which have some of my traditional recipes).

Some highlights from this year?

First, I switched up the method of cooking the Turkey for the first time ever!

I decided I wanted to try a brine and opted to use arguably the most popular brined turkey recipe on the internet: the Good Eats Roast Turkey.

IMG_5457

Brine ingredients.

You let the turkey sit in the brine for 8-16 hours. I put mine in the brine the night before, and took it out around 11:00 AM the next day.

That’s the other thing I liked about this recipe…MUCH shorter cooking time!  You roast at 500 for 30min, then lower to 350 for 2-2.5 hours until the bird is done.

The recipe recommends using a thermometer probe in the thickest part of the breast and removing the Turkey from the oven when a temp of 161 is reached.

IMG_5478

My only gripe is that I think I should have taken it out earlier.  Once the thermometer beep went off at 161 degrees, the popper had popped and I wonder if it had popped much earlier?  I think the meat was delicious, but the white meat was a tad drier than I was hoping with this brined turkey.

Although the drippings made some KILLER gravy this year.

Carrots.

Nothing groundbreaking here.  I always boil carrots as a side because I use the cooked carrot broth in the gravy.  HOWEVER, this year we remembered we still had carrots planted in our garden!

The only green left in the garden.

IMG_5464
A few colored ones!

I couldn’t believe how many we pulled up!

IMG_5469

IMG_5471

These were simply served with butter

IMG_5485

Of course the classic family recipe stuffing.

IMG_5484

Green beans

IMG_5486

I also had fun with the cheese plate this year!

My bff got me a slate cheese board for my bday last year and I had YET to use it!!

IMG_5481

We hit up Formaggio Kitchen in Cambridge and asked the guy to help us pick 3 cheeses.  I wish I could just go in there and sample EVERY cheese in that shop!!

IMG_5482

We went with a smooth comte, a 2.5year aged gouda, and a soft goat that was more on the mild side.  I love stinky cheese, but always go milder for guests.

Apps and Drinks

IMG_5483

And finally Desserts!!

After doing some online browsing for new fun, yet simple recipes….I picked these:

White Chocolate Mousse with Pomegranate Granita

This was actually super simple and SO good.  Definitely a favorite of everyone that came.  Plus they look fancy.

IMG_5454

This was an eggless mousse that basically was just white chocolate, cream, and crème fraiche!

The pomegranate granita couldn’t have been easier.  Just dissolve the sugar into the POM juice and freeze.  Before I was ready to serve I just ran a fork through it to break up the ice.

I didn’t even make the pomegranate syrup, and honestly you didn’t need it.

IMG_5492

Served in my grandmothers colored glasses she gave me :)

IMG_5493

Rich but delicious and refreshing at the same time.

Next was….

Apple Galettes with Caramel Sauce

IMG_5473

The recipe called for packaged puff pastry, but I just made a simple pastry dough from one of my cookbooks…your basic flour, butter, water.

I loved the addition of almond pasted under the apples

IMG_5475

But I made some without it for my friends with nut-allergies.

IMG_5474

Right before I served them, I made the caramel sauce on the stove.  It only takes a few minutes.

IMG_5491

These were awesome!  Although if you have leftovers, the caramel sauce gets a little weird just sitting on top.  So I’d recommend not topping them all with caramel unless someone wants to eat them all.

Also…

Mini Black Bottom Pies!       IMG_5490

Not the best photo.  But I used the same pastry dough as the apple galettes, and used a recipe from an OLD OLD Betty Crocker Cookbook.

IMG_5494

I only used 1 Tbsp of Rum in the recipe though and thought it was definitely enough!

Its basically a pie with a layer of a chocolate cream filling on the bottom, then a rum-custard filling over that.  Then serve with fresh whipped cream!

Well I think that just about covers it for House Thanksgiving 2012!!

It’s always a blast with my friends…although I think next year we will most definitely need a kids table!!  Crazy!

Speaking of kids…  I find out the gender of my baby today!!!!!!!!!!!!!

I CAN NOT EVEN WAIT!!  Only a few more hours now!!!

Hope everyone has a Happy Thanksgiving!!

Layered Pumpkin Cheesecake with Gingersnap Crust

And so Turkey month begins!!

Usually I end up with 3 Thanksgiving dinners during this time of year.  The first being the one I host for my friends (a tradition since Junior year of college), the 2nd on actual Thanksgiving with my family, and the 3rd the Saturday after Thanksgiving with Brian’s family.

Well the season kicked off early this year with #4.  Another friend decided to have a “Friendsgiving” this past weekend to double as a house-warming!

I was excited mostly because I got to see college friends I haven’t seen in a while and try out a new fun dessert!

IMG_5421

After racking my brain for a while, and realizing I didn’t have time for anything that involved making any component ahead of time, I opted for a cheesecake.

Not any cheesecake though.  I was going to go off of my grandmother’s recipe which is my and my family’s FAVORITE!

Ok, so her recipe is from some random old cookbook, but in my mind it’s still “Nanny’s cheesecake”.

IMG_5429

I started there, but wanted to put a festive twist on it and after a little online research I blended 3 recipes into what I wanted!

Double-Layer Pumpkin Cheesecake with Gingersnap Crust
makes 1 9” diameter cheesecake

adapted from Nanny’s recipe, this epicurious recipe, and this allrecipes recipe

Crust

  • 8 oz gingersnap cookies
  • 1 cup pecans
  • 2T brown sugar (packed)
  • 1/4 cup butter, melted

Filling

  • 3.5 packages cream cheese (8 oz each), room temp
  • 4 eggs
  • 1 tsp vanilla
  • 1 cup sugar (scant)
  • 1/2 cup pumpkin puree
  • 1/2 tsp cinnamon
  • shake of nutmeg and cloves

Toppings

  • 2 cups sour cream
  • 1 T sugar
  • 1 tsp vanilla

Pre-heat oven to 350

Crust
In a food processor, grind cookies, pecans, and brown sugar until finely ground.  Add melted butter and pulse until all combined.

Grease a 9” spring form pan with cooking spray or butter (I used a non-stick pan and it didn’t need to be greased).

Pour crust mixture into the pan and press into the bottom and up the sides about 2”.

Bake for 10-12 minutes.  Cool in the fridge while you make the filling.

Filling
With a mixer, beat cream cheese until light.  Add eggs one at a time mixing on low after each.  Then add vanilla and sugar.  Beat until light and creamy.

IMG_5431

Add half of this mixture to your cooled crust.

IMG_5433

To the remaining filling mixture, add the pumpkin and spices and beat until well combined.  Carefully spread this mixture on top of the first layer.

IMG_5436

Bake at 350 for 40-45 minutes.

Topping
In a separate bowl beat together sour cream, sugar, and vanilla with a spoon.  Spread on top of cheesecake surface.  Bake for another 5 minutes.

Cool, and refrigerate for at least 5 hours, or overnight.

IMG_5451

YUM!!  Love the crust, and mostly I love that the pumpkin aspect isn’t overpowering the cheesecake flavor.  I love the layer of classic cheesecake, the pumpkin layer adds a nice subtle spice and flavor, and the sour cream topping gives it a delicious sweet tangy flavor.

IMG_5452

This cheesecake got rave reviews at the party and Brian is fully enjoying the leftovers ;)

A Thanksgiving Salad

Hope you all had (or are still having) a fabulous Thanksgiving!  For us, we just knocked off our 2nd out of 3 Turkey Dinners of the week…oh boy.

#1 – Friendsgiving at our house
#2 – Thanksgiving Day -  Dinner at my aunts
#3 – A Thanksgiving dinner at Brian’s Family in NH on Saturday

So much turkey!

The only downfall to having an early Friendsgiving, is that I’m usually kind of sick of turkey by today.  Not completely, and I really enjoyed today’s dinner, especially the sides that were different than what I made (my aunt did garlic mashed potatoes and they were divine).

To counteract the Turkey dinner overload, I decided to bring a fresh colorful green salad!

IMG_2215

I wanted something with a Fall-theme to it, but with lots of fresh veggies and fruits!

I came across this salad on the Whole Foods website:
“Thanksgiving Green Salad”….sounded perfect to me!

IMG_2206

This salad combined mixed greens, fresh chopped fennel, orange segments, dried cranberries, and candied pecans all tossed with a raspberry balsamic dressing!

I also had the bright idea to add some crumbled goat cheese!  It’s pictured, but the cheese went excellent with the other ingredients.

IMG_2207

I opted to peel and segment my oranges with a knife (I used 4 large navel oranges), instead of just peeling them and using the break-apart segments…I just think it looks nicer :)

I also have a few family members who can’t eat nuts or seeds, so I left the candied pecans in a bowl on the side so people could add them on their own.  I also had to strain the pureed raspberries to get rid of the seeds.

IMG_2212

I packed the dressing in a mason jar and tossed the salad at my aunts house right before dinner!  From what I heard, it seemed everyone liked it!!  I really enjoyed it and can’t wait to re-create it at home.  I forget how much I love fresh fennel.

This girl needs to get to sleep now though…Black Friday tomorrow!!  I know most people won’t go anywhere near stores tomorrow, but my mom and I love it!  We don’t go all 1am @ Best Buy crazy, but we get to the mall around 7am…early, but not “crazy” early…yet early enough to not have to deal with traffic or finding a parking spot.  We browse around, try and get some Christmas shopping started, have an early-ish lunch, shop some more and head home :)  It’s just something we love doing together…although day after Christmas is my favorite (this is my 2nd fav…ok maybe 3rd after Birthday shopping ;)

Again, I hope everyone got to spend some time with family and/or friends today…those who you’re most thankful for :)

Christmas will be here before you know it…

Turkey Talk: Friendsgiving 2011

A couple of weeks ago I realized my friends and I have been getting together for our own pre-Thanksgiving dinner for 10 YEARS!!  This was our 10th annual Friendsgiving…or as we like to call it “House Thanksgiving”…previously known as “Apartment Thanksgiving”, but then I bought a house :)
IMG_2186
I’m thrilled that we’ve kept this tradition going since junior year of college!!  (also makes me feel kinda old)
Most of my classic recipes are on the blog already, so I’ll just give you the run-down and let you know what I changed up for 2011 and what I’m already thinking for 2012!
IMG_2184
The standards:
Turkey…but of course.  I don’t really know why but I always feel the need to get a 20+ lb turkey, regardless of my guest list.  I mean I love leftovers, but it’s just getting a little ridiculous.
IMG_2152
I was planning for 14 people (only 12 made it), and I bought a 21.6lb free range bird :)  Next year I am going to save some $$ and some cooking time and keep it more on the 16lb range I’m thinking.
IMG_2154
IMG_2178
Stuffing: Don’t expect me to ever try out a new recipe.  I love my grandmother’s recipe more than anything and my friends seem to feel the same….why mess with perfection right?  Plus I always make a HUGE batch and we barely have any leftovers.
IMG_2136
Mashed Potatoes:  Nothing too ground breaking here…potatoes, milk, butter, salt, pepper, and a little fresh chopped rosemary.
IMG_2185
Green Beans: I still prefer the pancetta/sage recipe to the standard green bean casserole.  I do like the casserole but just don’t feel the need for another heavy creamy dish.
IMG_2138
Carrots: What can I say?  I need the cooking water from these to add to the gravy :)
Squash:  I think I’m going to take a break from the soufflé next year.  I don’t know why, but mine just never turn out as good as I’d hope.  I even took it up a notch this year and took and idea from my aunt to cook the soufflé in baked sugar pumpkins!!  Fabulous idea, lovely presentation, but my soufflé was just NOT setting up…almost 2 hours in the oven and still not ready?!  Who knows.
IMG_2118
(cut the tops of 3 sugar pumpkins and scraped out the inside real good)
IMG_2125
(rubbed inside and outside with olive oil and sprinkled inside with salt, pepper, and brown sugar)
IMG_2133
(baked at 350 for 30min…prepped and baked these the day before)
I think next year I’m going to switch it up.  I love squash, and wouldn’t mind a less-heavy recipe next year.
Gravy:  Classic.  Drippings from the turkey, some chicken bullion, and the carrot cooking water.  Bring to boil, add flour/water mixture and simmer until thickened.
Cranberry sauce: I always have homemade and the jelly-kind in the can.  People always have their favorite…I grew up only liking the canned kind, but now I love both!
IMG_2114
IMG_2116
Dessert!  This is where I have my fun each year.
I made 3 desserts:
I mentioned I was thinking about making the Milky Way Tart because it was a hit at the last party I brought it too, and it still was a crowd favorite!
Apparently I was on a tart kick!  No pies were made this year (by me anyways), but I think I like this apple tart even better than apple pie!  It’s simple, delicious, and has an impressive presentation.
Also could be made ahead of time :)
IMG_2141
This tart dough was very different than the dough for the Milky Way Tart, but equally delectable…actually I might like this dough better.
IMG_2143
Rolled and trimmed to a 10”x14” rectangle
IMG_2146
Arrange the apples, sprinkle with sugar (and a little cinnamon), then dot with butter.
IMG_2151
IMG_2156 Once finished, you brush with an apricot jam glaze.
IMG_2159
So pretty!
IMG_2158
The crust is still crisp and flaky today too.
The Butterscotch Pudding cups comes from my favorite butterscotch pie that my grandmother makes!  Just instead of a pie, I put the filling into little mason jars.
Then right before dessert, I whipped up the meringue and torched it with my kitchen torch (always looking for a reason to use my torch)
IMG_2198
These were super cute, I want to make more things in mini-mason jars!
IMG_2200  (just realized I don’t have the exact recipe on the blog so I’ll fix that)
Other desserts (by others)
IMG_2202
Pumpkin pie!
IMG_2203
Mini pumpkin cupcakes with cream cheese frosting
Both were amazing.
Other notable deliciousness…CHEESE!
Don’t you love when you ask someone to bring something and you just KNOW it’s going to be good…even a cheese platter!?  I do!!  I take my cheese seriously ;)
Even I didn’t expect these masterpieces…
IMG_2171
Seriously??  2 HUGE platters of amazing cheese, meats, grapes, dried figs, pate, flowers(!), rosemary Marcona almonds…EVERYTHING!
IMG_2172 - Copy
Oh lets not forget the baked brie, chocolate covered strawberries, and little fall shaped pieces of marzipan.
IMG_2174
I’m also very thankful we have the leftovers of the cheese in the fridge :)
The final thing I LOVE about House-Thanksgiving is my tablescape!  Ok so it wasn’t my best work this year but I got distracted when I had some early arriving guests…
Will just call it simple.
IMG_2167
Little pears are an easy, colorful, and edible decoration!   Also a roll of $9 burlap from Lowes makes a nice rustic table runner.
IMG_2166
And mason jars + coffee beans+candles
IMG_2170

(broke out the "fancy" apron)
Phew!  That was quite the post!
Have you hosted a Thanksgiving dinner??  Any particular recipe that you can’t live without on Thanksgiving??
Also looking for good appetizer ideas to bring to my aunts on Thursday??
